Vegan Three Bean Salad
Preparation: 15 minutes plus chilling time (optional)
Serves 4
- 2 ½ c. green beans
- 2 c. cooked white beans, rinsed
- ½ c black beans, rinsed
- 1 ½ c. italian style salsa*
- 2 tsp lemon juice
- 1 c. chopped tomatoes
- 2 T. fresh parsley
- sea salt and pepper to taste
- Blanch the green beans in boiling water for a couple of minutes.
- In a large salad bowl combine all ingredients and mix well.
- Refridgerate over night to let the flavours combine. (optional)
- Serve at room temperature.
