Spinach, “Bacon” and Cheese
Jacket PotatoesIn the UK you they call them Jacket Potatoes, here in
Canada they are plain old Baked Potatoes.
Personally, I like the Jacket!Lacto (vegan option)
Preparation: 45 - 90 minutes
Serves 4
- 4 large baking potatoes (Idaho are good)
- 3 c. spinach, chopped
- 2 green onions
- 1/4 c. soy “bacon” bits
- 1 c. cheddar cheese, grated (vegan or soy cheese is fine)
- Bake potatoes in a 400F oven for about 1 hour. Or puncture potatoes and microwave on high for 15 minutes, then bake for 15 minutes. Potatoes should be soft on the inside and cruncy on the outside.
- Meanwhile, quickly steam or microwave spinach until just wilted.
- Squeeze out water from the spinach.
- Cut potatoes in half, lengthwise.
- Scoop out pulp, leaving a little bit of potato around the skin.
- Mash pulp together with spinach, green onions, “bacon” and cheese.
- Add salt and pepper to taste.
- Stuff potatoes shells with pulp mixture.
- Top with a dusting of paprika, and more cheese, if desired.
- Bake at 425F for 15 minutes, or until heated through.
Not just a side dish. This can be a whole meal!
