Italian Tofu and Spinach Patties Lacto
Preparation: 15 - 30 minutes
Serves 4
- 1 lb soft tofu, crumbled
- 10 oz. frozen, thawed chopped spinach,
- squeezed dry
- 1/4 c. parmesan cheese
- 1 c. shredded mozzarella cheese
- 1/4 tsp nutmeg
- 2 cloves garlic, mashed
- 1 tsp salt
- 1/4 tsp black pepper
- 2 c. dry breadcrumbs
- 3 T olive oil
- Mix together tofu, spinach, cheeses, nutmeg, garlic, salt, pepper in a medium bowl.
- Divide into 8 equal patties.
- Dip each patty in bread crumbs (important otherwise
- the cheeses stick to the pan when fried!!!).
- In a medium pan, fry the patties until golden on each side, about 3 minutes.
Serve as a burger in a bun, or with grains, pasta or potato
