Vegan Watermelon Mint Spritzer
Preparation: 15 minutes
Serves 4
- 1 kg cold watermelon
- 2 dozen (24) fresh mint leaves
- 1 T lemon juice
- 1/2 c sparkling water or club soda
- Cut the watermelon from the rind.
- Cut the watermelon into large chunks.
- In a blender, liquefy the watermelon, mint and lemon juice.
- Add the sparkling water.
- Pour into tall glasses.
If desired, pour a bit extra sparkling water on top
(this gives it a nice foam) and garnish with mint sprig.Adapted from 1,000 Low-fat Recipes by Terry Blonder Golson.
